General Information: Streptococcus macedonicus (strain ACA-DC 198) is a thermophilic, homofermentative, Gram-positive bacterium isolated from a naturally fermented Greek Kasseri cheese. It possesses a food-grade and non-pathogenic status. S.macedonicus are moderately acidifying and proteolytic, and produce bacteriocins as the anti-clostridial lantibiotic macedocin.
